Well, here we are at the beginning of July and about to jump headfirst into the high season. It is scorching hot today and driving through the town and onto Perps, the holidaymakers are out looking all relaxed and summery. Lucky swines! It has been a while since I posted, but not through laziness…(don’t count the sunny free moments in the garden!) we have been really busy and working really well, although we did experience a small tail-off at the end of June that is quite traditional, it’s as if people are laying low and preparing for the hols – gives us a chance to prepare, also!
Things are all working smoothly – and now I will have put a bok on it! Our staff are great and we are working like a well-oiled machine. That will definitely have put a bok on it! REALLY enjoying having a staff member to help in the kitchen. Not only to help during service, but to help in the cleanliness maintenance of the kitchen, monthly cleaning of extractor fans, weekly cleaning of fridges etc. all that can be done in down moments. Also, I can take advantage of the trays of fruit and veg that are now appearing. They say that the Roussillon is France’s orchard, and I can buy trays of local peaches and plums, nectarines and figs and actually have the time to pit them and then transform them into a healthy, delicious, local dessert. Roast peaches in white wine and vanilla anyone?
