From orchard to plate: a celebration of apples

This week I am celebrating the early crop of apples. According to my kitchen guru of the week, Raymond Blanc, Reine de Reinettes, the queen of russets, is perfect for baking – and happily I managed to find some beauties! Served with a calvados caramel. Yum.
